The June Daring Bakers' challenge was hosted by Jasmine of Confessions of a Cardamom Addict and Annemarie of Ambrosia and Nectar. They chose a Traditional (UK) Bakewell Tart that was inspired by a baking history dating back to the 1800's in England. Bakewell tarts combine a number of dessert elements but still let you show off your area’s seasonal fruits. Like many regional dishes there’s no “one way” to make a Bakewell Tart, but most of today’s versions fall within one of two types. The first is the “pudding” where a layer of jam is covered by an almond pastry cream and baked in puff pastry. The second is the “tart” where a rich shortcrust pastry holds jam and an almond sponge cake-like filling.
The version we were assigned was a combination of the two: a sweet almond-flavored shortcrust pastry, frangipane and jam.

So here we go. After making the sweetcrust pastry, fill the tart shell with homemade preserves or, in my case, store bought. I chose rose petal jam because I wanted to see how it went with the almond flavoring. Delicious by the way...
Next, you add your layer of frangipane...
After that, it goes in the oven with some almonds added near the end of baking time. It's that easy!
Rose petal jam sounds delicious! And for being out of your comfort zone, your tart/pudding looks great!

That jam is such a gorgeous shade of pink, you have to stare at it a few minutes before you evven think about eating it! Beautiful Bakewell tart!!

fabulous! i wondered how the rose petal jam tasted like. i have made hibiscus jam but have not tried making it with rose petals. i bet it smelled wonderful. awesome job on the challenge!

I love the idea of using Rosepetal jam. Where did you find it? This doesn't seem too difficult, so that's for the recipe. It might be a good one to try soon.
